I shared this delicious 5-Ingredient Mango Salsa on KOIN AM Extra. Mangoes are in season and just in time for summer picnics and barbecues! They are rich in color and antioxidants, help support our immune system, and can also improve our hair and skin health. Of course, we all love chips with salsa, however, on The 1:1:1 Diet, the mango is a carbohydrate and makes for the perfect side with any protein like grilled salmon or chicken. - 4 ripe mangoes (peeled, pitted, and diced)
- 2 small red onions (peeled and diced)
- 2 jalapenos (seeded and diced)
- 1/3 cup of cilantro
- Juice of 2 limes
Toss all ingredients together. Season with salt and pepper if needed. Serve immediately or refrigerate in a sealed container for up to 2 days.
