I created this delicious dish for World Pistachio Day and one of the ingredients was a stuffing. I know you’re probably thinking- stuffing in spring? But this “stuffing” is a little different. Instead of breadcrumbs, The Trader Joe’s Riced Cauliflower Stuffing is made with, you guessed it, cauliflower rice. Believe me when I tell you, it is soooo good! You can find it in the frozen foods section.

I needed something to add color and bulk to my dish, and I was pleasantly surprised at how perfect this ingredient was! This is also a great alternative if you are looking for a gluten-free stuffing for the holidays.

I had leftover chicken so I sauteed this along with frozen broccoli. In another pan, I prepared the stuffing according to the directions on the packaging. Once cooked, I combined the ingredients, and topped with 1 tbsp. of pistachios. The stuffing includes dried cranberries, making this is a complete 1:1:1 Meal.
