This delicious and simple recipe for a Pistachio Pomegranate Parfait is the perfect breakfast, snack or dessert! The combination of healthy fats from pistachios, antioxidants from the pomegranate arils, and high protein Greek yogurt, creates the perfect balance for this parfait recipe.
Healthy fats are an important part of our diet as they help with our mood, satiety, brain and heart health, When it comes to a snack recommendation, pistachios are at the top of my list. In-shell pistachios take longer to eat, which can lead to feeling fuller. This may also slow you down helping you become more conscious of what you’re eating. One ounce of in-shell pistachios (that’s 49 nuts!) makes snacking and prep so much easier! Pistachios contain healthy fats, plant protein, and filling fiber. They are also a great alternative to croutons in a salad and can be used instead of pine nuts when making a homemade pesto sauce.
Pomegranates contain polyphenols which are antioxidants known to combat unstable molecules that can cause damage to your cells and DNA over time. These harmful molecules are called free radicals.
Additionally, the pomegranate arils paired with the honey and vanilla extract gives this parfait the perfect balance of tart and sweet!
Greek yogurt is also high in protein which helps to keep your blood sugar stable.

Ingredients:
- 1 cup plain low-fat Greek yogurt
- 2 tsp honey
- ½ tsp ground cinnamon
- ¾ cup pomegranate arils
- 30 no- shell pistachios
Method:
1. In a bowl, mix together the yogurt, vanilla, cinnamon and honey
2. Alternate layering the pomegranate arils and yogurt mixture in a glass
3. Top with pistachios and enjoy!
