Festive and colorful, this Pomegranate Salsa side dish is delicious served alongside a protein for dinner – like salmon or chicken. While entertaining, you can top a chèvre cheese log with this salsa for added texture and a burst of flavor. 

 

Ingredients:

  • 5 cups pomegranate arils
  • 1/3 cup of red onions, diced to your desired size. 
  • 1-2 jalapeños, seeds and ribs removed, finely diced (adjust to your spice preference)
  • 1/2 cup of fresh cilantro, chopped
  • 1 lime 
  • Sea salt to taste 

Instructions: Combine the ingredients below in a bowl. A squeeze of lime and sea salt.  Serves 6.
