Good Eats: The Health Benefits of Artichokes
In my ” Good Eats” series with Martha Stewart, I share the health benefits of different fruits and vegetables as well as selected recipes that you can easily prepare at home. One of my favorite pieces was all about artichokes.
The artichoke is technically a flower bud that has not yet bloomed and it is also one of the most nutrient-rich vegetables. High in fiber, artichokes can aid digestion as well as contribute positively to lowering cholesterol. In fact, one serving of artichokes provides greater anti-oxidant benefits per serving than other foods we consider high in antioxidants like blueberries, red wine, or dark chocolate
